In medium bowl dissolve active dry yeast and 1 tsp sugar with 3/4 cup warm water.
In large bowl, whisk together 2 tsp of sugar, flour, and salt.
Add yogurt and olive oil to yeast and whisk together.
Add yogurt mixture to dry ingredients and mix together with a fork. When it starts to come together, dust your hands with flour and kneed into a soft, sticky dough.
Put dough in lightly oiled bowl and cover. Let it rise until doubled.
Dust work surface with flour and dump out dough. Shape dough into long rectangle and cut 6 even portions.
Roll each portion in flour to prevent them from sticking.
Warm cast iron pan over medium high heat.
Roll dough out into an oval shape about 1/8 thick (9x4 inches). Flip flop dough between hands to knock off excess flour.
Lay dough in dry skillet until top is bursting with air bubbles. Flip and brown.
