Ciabatta Bread

Ingredients

165 grams Bread Flour
130 grams Water
1 pinch Active Dry Yeast
180 grams Water
250 grams Bread Flour
3 grams Active Dry Yeast
5 grams Kosher salt

Directions

  1. In large mixing bowl combine 165g flour, 130g water, and 1 pinch of yeast.
  2. Combine ingredients.
  3. Cover and let stand at room temperature for 12 - 24 hours.
  4. Add 180g water, 250g flour, yeast and salt. Stir until well combined and knead if necessary to hydrate all flour.
  5. Let sit for 45 minutes.
  6. Stretch and fold dough.
  7. Let sit for 45 minutes.
  8. Stretch and fold dough.
  9. Let sit for 45 minutes.
  10. Stretch and fold dough.
  11. Let sit for 45 minutes.
  12. Put baking steel and cast iron pan in oven (cast iron pan on lower shelf).
  13. Preheat oven to 450° F.
  14. Divide dough into two loaves and put on parchment paper.
  15. Cover with something that won't stick to the dough. Maybe spray Pam on plastic wrap?
  16. Rise for 1 hour.
  17. Put loaves on baking steel. Put two cups of ice cubes in cast iron pan (for steam).
  18. Bake for 20 minutes (more or less) until golden brown. Center should be 205-210° F.
